5 medium potatoes (white or sweet), washed and scrubbed

The Method:
Preheat your oven to 200°C.
Rub each potato with a little olive oil and sea salt, then place on a baking tray.
Roast for 50–60 minutes, or until the skins are crisp and the insides tender (You can reduce the cooking time by microwaving the potatoes for around 10 minutes and then baking for around 30 - or until you’ve reached the golden texture you like)
Slice open and fluff the centres with a fork before adding your chosen filling.
