Lemon, Dill & Mustard Chickpea Dip with Greek Yoghurt

Fresh, savoury, and herby, this lemony chickpea dip is a lighter take on a classic — no tahini, just creamy Greek yoghurt, plenty of herbs, and a little mustard for depth. It’s bright and modern, with enough texture to feel intentional rather than over-blended.

The addition of finely chopped green beans gives the dip a subtle bite and a fresh, designed feel, while dill and lemon keep everything lifted and vibrant. It’s the kind of dip that works just as well on a grazing table as it does spooned onto salads or served alongside grilled vegetables.

Ingredients

  • 1 × 400 g tin chickpeas, drained and rinsed

  • ¼–½ cup Greek yoghurt (start with ¼ cup; add more as needed)

  • 2 tbsp olive oil, plus extra to finish

  • 1 small garlic clove, finely grated

  • 1 tsp Dijon or wholegrain mustard

  • 1 lemon – zest of ½, juice of ½–1 (to taste)

  • ½ tsp chilli flakes (or to taste)

  • ½ tsp salt, or to taste

  • ½ cup blanched green beans, very finely chopped

  • 2–3 tbsp fresh dill, finely chopped

Method

Blend the base
Add the chickpeas, Greek yoghurt, olive oil, garlic, mustard, lemon juice, and salt to a food processor. Blend until smooth but still slightly textured — creamy, but not completely puréed.

Fold in texture
Stir or gently pulse through the chopped green beans. Fold in the fresh dill and chilli flakes.

Finish
Taste and adjust with more lemon juice, salt, or yoghurt if needed. Spoon into a serving bowl and finish with a drizzle of olive oil, extra dill, and chilli flakes or chilli oil. Add a little lemon zest on top if you like.
