Egg Bake Breakfast Muffins
There’s something reassuring about having breakfast ready before the day begins.
These egg bake muffins are simple, balanced, and designed for easy mornings. They’re high in protein, full of colour, and easy to assemble into something that feels far more substantial than the effort required.
I like recipes that remove friction from busy mornings. When something nourishing is already made, it’s easier to sit down and eat, rather than skip, rush, or grab whatever is quickest.
This one is flexible too. Keep it simple or build it into a more filling breakfast sandwich depending on what you need that day.
Makes
4–6 servings (depending on portion size)
Ingredients
6 eggs
2 tbsp cottage cheese
1 tbsp pesto
1-2 cups fresh spinach
1 cup cherry tomatoes, halved or chopped
A handful of fresh basil leaves, torn
Salt and Pepper to taste
Optional for serving:
Sliced cheese
A little mayonnaise
Toasted English muffins
Method
Preheat oven to 180°C (160°C fan).
In a bowl, whisk together the eggs, cottage cheese, pesto, basil, salt, and pepper until mostly smooth.
Fold through the spinach and cherry tomatoes.
Pour the mixture into a lined 15 x 15 cm baking tin.
Bake for 20–25 minutes, until set in the centre and lightly golden on top.
Allow to cool slightly before slicing into squares sized to fit your English muffins.
To Assemble
Toast an English muffin, add a square of egg bake, and top with cheese or a small smear of mayonnaise if desired.
You can also enjoy the egg bake on its own, alongside avocado, or with a simple side salad.
Meal Prep Tip
Store sliced squares in an airtight container in the fridge for up to 4 days.
You can make up all of your toasted muffins (with the egg bake and fillings), wrap in baking paper and store in the fridge. Reheat or have straight from the fridge.
Having these ready to go makes mornings feel calmer, and makes it much easier to eat something balanced before the day runs away with you.
