Gentle Greens Wellness Soup

There are times when food needs to do a little less — less heaviness, less stimulation — and offer more gentleness instead. This soup was created for those moments. It’s calming, simple, and quietly nourishing, designed to support digestion, energy, and ease.

With soft vegetables, fresh herbs, and a clean, creamy texture, this gentle greens soup is the kind of meal that feels like a reset. It’s comforting without being rich, restorative without trying too hard — just a bowl of warmth that lets your body exhale.

Ingredients

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, sliced

  • 1 small potato, peeled and chopped (approx. 150 g)

  • 1 medium cauliflower, chopped (approx. 400 g)

  • 3 courgettes, chopped (approx. 300 g)

  • 1–1½ L vegetable stock

  • 2–3 sprigs fresh thyme (or ½ tsp dried)

  • 60 g fresh spinach

  • 2–3 tbsp fresh parsley, chopped

  • Salt & black pepper, to taste

Optional to serve:

  • Extra olive oil or a swirl of yoghurt

Method

Sauté the aromatics

Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook for 3–4 minutes, until soft and translucent.
Add the garlic and thyme, cooking for a further 30–60 seconds until fragrant.

Cook the vegetables

Add the chopped potato and stir for 2–3 minutes to coat it in the oil.
Add the cauliflower, courgettes, and vegetable stock.
Bring to a gentle simmer and cook for 20–25 minutes, until all the vegetables are very tender.

Add the bright greens

Lower the heat and stir in the spinach and parsley.
Allow the spinach to wilt gently for 30–60 seconds.

Blend

Using a stick blender (or transferring carefully to a blender), blend the soup until smooth and creamy.

Season & serve

Taste and adjust seasoning with salt and pepper.
Serve warm, finished with a drizzle of olive oil or a swirl of yoghurt if you like.
