Goats cheese, Olive and Caramelised onion bruschetta

There’s something effortlessly indulgent about a warm, crunchy slice of bruschetta topped with creamy goat’s cheese, salty-savoury black olive tapenade, and sweet, caramelized onions. This recipe transforms simple ingredients into a vibrant, flavour-packed snack or starter that’s perfect for sharing—or for treating yourself. Every bite is a mix of textures and tastes: soft cheese, silky onions, and a little crunch from the bread.

Ingredients

For the Black Olive Tapenade:

  • 150 g black olives (pitted)

  • 2–3 anchovy fillets (OR Sun-dried tomatoes if Vegetarian/Vegan)

  • 1–2 garlic cloves

  • 2–3 tbsp olive oil (plus extra if needed)

For the Caramelized Onions:

  • 3 medium onions (yellow or brown), thinly sliced

  • 1–2 tbsp olive oil or butter

  • Pinch of salt

  • 1 tsp sugar or honey (optional, to enhance caramelization)

For the Bruschetta:

  • 1 French stick or similar rustic bread, sliced

  • 150–200 g goat’s cheese with rind

  • Olive oil for brushing the bread

  • Fresh thyme

Method

  1. Make the tapenade: Blitz the olives, anchovies, garlic, and olive oil in a food processor until a coarse paste forms. Adjust the olive oil for your preferred consistency.

  2. Caramelize the onions: Heat olive oil or butter in a pan over medium-low heat. Add the onions, a pinch of salt, and sugar or honey if using. Cook slowly, stirring occasionally, until soft, sweet, and golden brown (about 20–25 minutes).

  3. Prepare the bread: Brush the slices of bread lightly with olive oil and toast until golden and crisp.

  4. Assemble the bruschetta: Spread a generous layer of tapenade on each slice, top with slices of goat’s cheese. Put under the grill until golden and bubbling.

  5. Finishing touches: Add the caramelised onion on top of the bubbling bruschetta and top with thyme. Serve immediately and enjoy.
