Miso Tahini Dressing
A good dressing can make the difference between a lunch you feel excited about and one that feels like an afterthought. This miso tahini dressing is one of my favourites for exactly that reason.
It's creamy, savoury and slightly sweet, with the miso adding plenty of umami and the lemon or lime bringing some brightness. I love it with salads, roasted vegetables and grain bowls, but it's equally good drizzled over tofu, fish or simple steamed vegetables.
It's also incredibly quick to make, which is exactly what I want from a meal prep staple. Make a jar at the beginning of the week and you've got a dressing ready to go whenever lunch needs a little more flavour.
This is one of the simple foundations from my Mindful Meal Prep System, where the focus is on preparing useful components rather than complete meals.
Ingredients
4 tbsp tahini
1 tbsp lemon or lime juice
1 tbsp miso paste
3 to 4 tbsp water
1 tsp maple syrup
Pinch of salt, to taste
Method
Add the tahini, lemon or lime juice, miso, maple syrup and 3 tablespoons of water to a bowl or blender.
Whisk or blend until smooth, adding the remaining water a little at a time until you reach your preferred consistency. Taste and add a little salt if needed.
Transfer to a clean jar, cover and refrigerate. Shake or stir well before using.
Makes approximately 150ml, enough for a week of salads.
Ways to use it
Drizzle over green salads, roasted vegetables or grain bowls, or use it as a dressing for tofu, fish or steamed vegetables. It also works beautifully as a dip or sauce when made slightly thicker.
Storage
Keep refrigerated for up to 2 weeks. The dressing will thicken slightly when chilled, so shake well and add a small splash of water if needed before serving.
