There is something strangely satisfying about opening the fridge in the morning and realising breakfast is already waiting for you.
No decisions, no effort, no rushing around trying to work out what sounds manageable before tea. Just something soft, chilled, slightly indulgent, and ready to eat.
These overnight Weet-Bix recipes have quietly become one of my favourite forms of meal prep lately. They feel somewhere between breakfast and dessert, but still leave you feeling properly nourished and satisfied afterwards.
Growing up in the UK, we always called it Weetabix. Australia seems to have misplaced the “A” somewhere along the way, which still feels slightly wrong to me. My dad still eats his every single morning, so part of me likes the idea that these are simply a slightly updated version of something familiar.
I went for three completely different flavours here. A cosy carrot cake version, a berry cheesecake-inspired one, and an earthy matcha variation that feels a little calmer and less sweet.
The nice thing about recipes like this is that they make breakfast feel less functional. A little softer, a little more enjoyable, and significantly easier on busy mornings.
Carrot Cake Overnight Weet-Bix
Ingredients
2-3 Weet-Bix
125ml milk
½ small carrot, finely grated
100-150g Greek yoghurt
1 scoop vanilla protein powder
½ tsp cinnamon
1 tsp maple syrup
Small handful walnuts, chopped
Method
Crush the Weet-Bix into a container.
Add the milk, grated carrot, cinnamon and maple syrup and mash together with a fork until combined.
Mix the yoghurt and protein powder together until smooth and spread over the carrot cake base.
Top with walnuts and a little extra cinnamon.
Refrigerate overnight.
Blueberry Raspberry Cheesecake Overnight Weet-Bix
Ingredients
2-3 Weet-Bix
125ml milk
100-150g Greek yoghurt
30g cream cheese, softened
1 tsp maple syrup
Handful blueberries and raspberries
Method
Crush the Weet-Bix into a container and pour over the milk. Mash together until soft.
Blend or mash the berries into a loose compote.
Mix the yoghurt, cream cheese and maple syrup until smooth and spread over the base.
Spoon over the berries and swirl gently.
Refrigerate overnight.
Matcha Overnight Weet-Bix
Ingredients
2-3 Weet-Bix
¼ cup prepared matcha, cooled
100-150g Greek yoghurt
1 scoop vanilla protein powder
1 tsp maple syrup, optional
Matcha powder, for dusting
Method
Crush the Weet-Bix into a container.
Pour over the cooled matcha and mash until evenly soaked.
Mix together the yoghurt, protein powder and maple syrup until smooth and spread over the base.
Dust with matcha powder.
Refrigerate overnight.
A Mindful Moment
I think breakfast often becomes the meal most affected by urgency.
Something grabbed quickly, eaten distractedly, or skipped entirely because the day already feels like it has started before we have caught up with it.
Preparing something the night before changes the feeling slightly.
Not because overnight Weet-Bix is revolutionary, but because small acts of preparation can create softness where there would otherwise be stress.
And sometimes nourishment begins there. Not in perfection, but in making things a little easier for yourself ahead of time.
