Roasted Cherry Tomato & Herb Potato Gratin

Easy • comforting • a little bit indulgent

Having something tucked away in the freezer that feels equal parts convenient and a little bit bougie is always a win.

These potato gratins are exactly that. Crisp on the outside, soft and rich in the middle, and full of flavour without asking much of you. The kind of thing you could serve at a dinner table with friends, or just as easily make for yourself on a quiet night in.

I added roasted cherry tomatoes and a simple herb yoghurt on top, which brings a bit of freshness and balance. But you could take this in so many directions. Smoked salmon, something creamy, even leaning into it with something more indulgent (like caviar!) if you felt like it.

It is one of those meals that looks and tastes like you have spent far longer on it than you actually have.

Ingredients

4 x individual Potato gratins (frozen)

1 cup Cherry tomatoes

Splash of Olive oil

Splash of balsamic vinegar

Salt and black pepper

Fresh basil

Herb yoghurt topping

1-2 tbsp Greek yoghurt

1 tbsp Crème fraîche

Small handful Fresh herbs

0.5-1 clove of Garlic

1-2 tsp Lemon juice

Half a tbsp Olive oil

Salt, black pepper

Pinch chilli flakes

Method

Preheat the oven according to packet instructions.

Place the gratins onto a baking tray and cook for around 30 minutes, until golden and crisp.

On a separate tray, add the cherry tomatoes with olive oil, a small splash of balsamic, salt and pepper. Roast for about 25 minutes, until soft and blistered.

Mix together the yoghurt, crème fraîche, herbs, garlic, lemon juice, olive oil, salt, pepper and chilli flakes.

Serve the gratins topped with the yoghurt, roasted tomatoes, fresh basil and a little black pepper.

Reflection

There are always going to be days where you do not quite know what you want to eat, or how much energy you have to make something.

In those moments, having something easy to turn to is more than just convenient. It is a way of taking care of yourself without needing to think too much about it.

A meal like this might be simple, but it still creates a sense of nourishment, of doing something small that feels good.

And sometimes, that is enough.
