Toasted nut seed mix
This is one of those small recipes that quietly upgrades everything.
A simple toasted mix of nuts and seeds, lightly sweetened and balanced with sea salt. It adds crunch to softer meals, substance to lighter breakfasts, and makes a satisfying snack straight from the jar.
It’s minimal effort, but it makes everyday food feel more intentional.
Makes
Approximately 2–3 cups
Ingredients
1 cup pistachios
¾ cup almonds
¼ cup mixed seeds (pumpkin, sunflower, chia, linseed)
3–4 Medjool dates, finely chopped
1 tsp honey or maple syrup
Pinch of sea salt
Method
Heat a dry skillet over medium heat.
Add pistachios, almonds, and seed mix. Toast for 3–5 minutes, shaking the pan frequently, until fragrant and lightly golden. Keep an eye on them, nuts can catch quickly.
Transfer to a bowl while still warm.
Stir through the chopped dates, honey or maple syrup, and a pinch of sea salt. The residual heat will help everything coat lightly and bind together.
Allow to cool completely before storing in an airtight jar.
How to Use
Sprinkle over overnight oats or yoghurt.
Add to smoothie bowls for texture.
Blend into smoothies for healthy fats and crunch.
Or simply snack straight from the jar.
Storage
Store in an airtight container at room temperature for up to 1–2 weeks.
A Mindful Moment
When you toast nuts and seeds, the aroma changes almost instantly, warm, nutty, grounding.
Before adding this to anything, pause and notice that shift. Food has texture, scent, warmth. Even something as simple as a handful of nuts can bring you back into the present.
Sometimes mindful eating isn’t about changing what you eat, it’s about paying attention to it.
