Tofu Instant Noodle Jars

These noodle jars are the kind of thing you prep once and thank yourself for later.

They are fresh, flavourful, and built to sit in the fridge ready for busy days. When you are ready to eat, just add boiling water and let everything soften into a warm, comforting bowl.

Perfect for work lunches or days when you want something quick but still nourishing.

Ingredients (per jar)

40–50g vermicelli noodles
50–60g firm tofu, cubed and lightly fried
¼ cup shelled edamame
½ carrot, ribboned
1–2 spring onions, sliced
Small handful spinach
Small handful coriander
Small handful bean sprouts
1 tsp sesame seeds
Fresh chilli, sliced

Sauce (bottom of jar)
1 tsp miso paste or 1–2 tsp miso broth powder
1 tsp soy sauce or tamari
½ tsp sesame oil
½ tsp gochujang

To finish
Lime wedge or squeeze

Jar layering

1. Sauce (bottom layer)
Mix miso, soy, sesame oil and gochujang.

2. Vegetables (flavour base)
Add edamame, carrot ribbons, bean sprouts and enoki mushrooms.
These soften beautifully once hot water is added.

3. Noodles
Add vermicelli noodles loosely on top.

4. Protein
Add tofu cubes.

5. Fresh topping layer
Finish with spinach, coriander, spring onions, sesame seeds and chilli.

To serve

Pour over 250 to 300ml boiling water.
Cover and let sit for 5 to 7 minutes until the noodles soften.

Stir well to dissolve the sauce.

Finish with a squeeze of lime.
