Blueberry Overnight Oats

Overnight oats are one of my favourite breakfasts to make ahead. They're incredibly simple, require no cooking and can be prepared in just a few minutes, which makes them particularly useful when you want breakfast ready and waiting in the fridge.

I like this blueberry version for its simplicity, with creamy yoghurt, chia seeds, cinnamon and plenty of blueberries. The combination makes for a satisfying breakfast that keeps well for a few days, and it's easy to adapt depending on what you have in the kitchen.

Swap the blueberries for raspberries, strawberries or banana, change the nuts, add a little nut butter or use whatever fruit is in season. You can also add protein powder if you want to make the breakfast a little more substantial.

This is exactly the kind of simple preparation I include in my Mindful Meal Prep System. Rather than preparing every meal for the week, the idea is to have a few useful things ready that make nourishing yourself easier when life gets busy.

Ingredients

⅓ cup rolled oats
⅓ cup milk of choice
⅓ cup yoghurt
1 tbsp chia seeds
½ tsp cinnamon
½ cup blueberries
1 tsp maple syrup or honey
1 tbsp chopped walnuts or other nuts
1 scoop protein powder, optional
Splash of extra milk, if using protein powder

Method

Add the oats, milk, yoghurt, chia seeds, cinnamon, blueberries, maple syrup or honey and walnuts to a jar or container. Add the protein powder if using and stir everything together well.

If you've added protein powder, add a splash more milk if the mixture feels too thick. Cover and refrigerate overnight, or for at least a couple of hours.

Give the oats a good stir before serving and add extra blueberries, walnuts or yoghurt on top if you like.

Storage

Keep covered in the fridge for up to 3 days. If the oats become too thick, stir through a little extra milk before serving.

Easy variations

The basic overnight oats mixture is very adaptable. Try swapping blueberries for raspberries, strawberries, banana or stewed apples. You can also change the nuts and seeds, add nut butter, or finish with coconut, cacao nibs or your favourite seasonal fruit.
