Everyday Herb Dressing
If I could only make one thing to have ready in the fridge for the week, it would probably be a good salad dressing.
A homemade dressing can completely change the way you eat during the week. A handful of leaves, some roasted vegetables or a few leftover grains can become a proper meal with nothing more than a generous drizzle of something flavourful.
This Everyday Green Herb Dressing is the version I make most often. I usually use parsley and dill because they work with almost everything, but the recipe is deliberately flexible.
For prawn tacos, I love making a coriander and lime version. Basil makes a beautiful dressing for roasted Mediterranean vegetables, while mint, coriander or a combination of soft herbs can completely change the character of the same basic recipe.
It's one of the simple foundations from my Mindful Meal Prep System that I like having ready in the fridge. You don't need to prepare an entire week's worth of meals. Sometimes one good dressing is enough to make everything else feel a little easier.
Ingredients
½ cup yoghurt
2 tbsp olive oil
1 small garlic clove, finely grated, optional
Fresh herbs, such as parsley, dill or coriander
Squeeze of lemon or lime
Salt and pepper
Method
Whisk or blend all of the ingredients together until smooth, or blend for a finer dressing. Add more lemon or lime to taste and adjust the seasoning as needed.
Transfer to a clean jar, cover and refrigerate. Shake or stir well before using.
Makes approximately 150ml, enough for 4 to 5 days of salads.
Ways to use it
Drizzle over green salads, roasted vegetables, grain bowls or simple cooked vegetables. I also love it with fish or prawn tacos. For tacos, I usually swap the parsley and dill for fresh coriander and use lime instead of lemon.
For a Mediterranean version, try using fresh basil with lemon and drizzle it over roasted courgette, peppers, aubergine or sweet potato.
Storage
Keep refrigerated and use within 5 days.
