Egg & Rocket Pots
These little Egg & Rocket Pots are one of those simple things I love having ready in the fridge. They take just a few minutes to assemble and make an easy breakfast, snack or addition to lunch.
The combination of boiled eggs, peppery rocket and sweet cherry tomatoes is delicious on its own, but the beauty of these pots is that you can make them your own. Add feta or hummus, change the spice, use a different cheese or serve them with whatever you already have in the fridge.
They are also incredibly versatile. Add a pot to a salad or grain bowl, serve alongside roasted vegetables, or simply grab one when you need something nourishing without having to think too much about it.
These are part of my Mindful Meal Prep System, where the idea is to prepare simple components ahead of time that can be mixed and matched throughout the week.
Ingredients
Serves 2
4 eggs, boiled
2 handfuls rocket
Cherry tomatoes, halved
Feta, crumbled, optional
Hummus, optional, to serve
Smoked paprika, optional
Salt and freshly ground black pepper
Extra virgin olive oil, to serve
Method
Place a generous handful of rocket into each jar or container.
Add the halved boiled eggs and cherry tomatoes, then season with a little salt and pepper and a sprinkle of smoked paprika.
When ready to eat, drizzle with a little extra virgin olive oil and finish with crumbled feta or a spoonful of hummus.
Make it your own
This is one of those recipes where there really is no need to follow the ingredients too rigidly.
Swap the smoked paprika for another spice or seasoning you love. Try goat's cheese instead of feta, or use a different dip in place of hummus. You could also add fresh herbs, avocado or another vegetable depending on what you have available.
The idea is to create a simple base that works with what is already in your kitchen.
Meal Prep Notes
Boil the eggs ahead of time and store them unpeeled in the fridge for up to 5 days.
You can also air fry whole eggs at 130°C for 13–15 minutes. Allow them to cool before storing.
For an easy breakfast, assemble the pots the night before and keep them refrigerated until you're ready to eat.
You can also use the eggs as a prepared component rather than assembling the pots at all. Add them to a salad, grain bowl or plate of roasted vegetables when you need a quick meal.
