Cheesymite Breakfast scrolls
Simple • savoury • meal prep friendly
These are one of those recipes that feels a little bit nostalgic.
Think of them as somewhere between an egg muffin and a savoury scroll. The wraps crisp slightly in the oven, the cheese melts through the layers, and the egg mixture sets everything into these soft, golden spirals.
They’re simple to make and great for meal prep. I like keeping a few in the fridge for quick breakfasts or an easy snack during the week. They also travel well, which makes them handy for work or school lunches.
You can keep them classic with just Marmite and cheese, or add a few vegetables if you have them on hand. Either way, they’re satisfying, comforting and very easy to put together.

Ingredients
6 small wraps or tortillas (depending on which size you use)
1–2 tsp Marmite or any ‘mite’, spread very thinly
¾ cup grated cheese (cheddar works well)
Egg mixture
6 eggs
Salt and pepper
Optional extras
Chopped spring onion
Finely diced tomato
Spinach
Method
1. Prep the wraps
Lay the wraps flat.
Spread each one with a very thin layer of Marmite. A little goes a long way.
Sprinkle evenly with the grated cheese.
Stack three wraps on top of each other.
2. Roll
Roll the stack into a loose log.
Slice into 3 to 4 pieces, about 3 to 4 cm thick.
Repeat with the remaining wraps.
3. Arrange
Place the pieces cut side up in a greased muffin tray.
They should look like small spirals or flowers.
4. Make the egg mixture
Whisk the eggs with a pinch of salt and pepper until well combined.
5. Fill
Pour a little egg mixture into each muffin cup so it settles between the spiral layers.
If you are adding vegetables, scatter them in before pouring the egg mixture.
6. Bake
Bake at 180°C for 15 to 18 minutes, until puffed and golden.
Allow them to cool slightly before removing from the tray.
Notes
These keep well in the fridge for a few days and can be reheated in the oven, air fryer or microwave.
They are great for meal prep and make an easy savoury breakfast or snack when you need something quick.
