Freezer Herb Cubes: The Simple Mindful Meal Prep Hack I Use Every Week

Some of the most useful things in my freezer aren't full meals.

They're the small ingredients that quietly make everyday cooking easier.

Whenever I have leftover herbs, I rarely let them wilt in the fridge. Instead, I turn them into flavour cubes that can be dropped straight into soups, pasta sauces, curries, stews or roasted vegetables.

They're quick to make, reduce food waste, and save me from buying the same bunch of herbs week after week.

These cubes are one of the small systems that form part of my Mindful Meal Prep System, which will be launching soon. Rather than preparing every meal in advance, the idea is to prepare the foundations that make cooking feel calmer and more effortless throughout the week.

How to Freeze Fresh Herbs

Rosemary Cubes

Finely chop the rosemary and pack it firmly into an ice cube tray.

Top each cube with olive oil and freeze.

Sage Cubes

Finely chop the sage and pack it into an ice cube tray.

Top with olive oil and freeze.

Rosemary and sage freeze particularly well because they're woody herbs and hold their flavour beautifully.

Other woody herbs like Thyme also freezes beautifully.

Basil Oil Cubes

Basil is a little different.

Rather than chopping it, blend the basil with just enough olive oil to help it come together.

Pour into an ice cube tray and freeze.

Blending the basil helps preserve its vibrant green colour and creates a little basil oil that's perfect for pasta, soups and sauces.

Garlic, Ginger and Onion Freezer Cubes

These are some of the most useful cubes I keep in my freezer.

Finely chop or briefly pulse together:

  • Onion

  • Garlic

  • Ginger

  • Olive oil

Freeze into cubes and use them as the starting point for:

  • Curries

  • Soups

  • Stir fries

  • Pasta sauces

It's a simple habit that saves time and means you're never starting completely from scratch.

Stock & Wine Cubes

Two more freezer staples I always recommend.

Broth Cubes

Freeze leftover vegetable or chicken stock in ice cube trays.

Perfect for adding a little extra flavour to soups, sauces and grains.

Wine Cubes

If you have leftover white wine, freeze it into cubes instead of pouring it away.

They're brilliant for:

  • Risotto

  • Pasta sauces

  • Soups

  • Pan sauces

Freezer Tips

Use silicone ice cube trays so the cubes pop out easily once frozen.

Once frozen solid, transfer them to a labelled freezer bag or airtight container.

This keeps your trays free and makes it easy to grab exactly what you need.

A Reflection

One of the biggest lessons meal prep has taught me is that ease is often created long before we need it.

A few herbs rescued before they're forgotten.

A little leftover stock frozen instead of wasted.

Half a bottle of wine saved for another meal.

None of these things feels particularly significant on their own.

But together, they create a kitchen that feels calmer, more resourceful and ready for everyday life.
