Maple Mustard Dressing
This is one of my favourite dressings to have ready in the fridge. It's sweet, sharp and savoury, with the maple syrup balancing the acidity of the apple cider vinegar and the mustard giving it plenty of flavour.
I make a jar at the beginning of the week and use it on all sorts of things. It's particularly good with simple green salads, but I also love it drizzled over roasted vegetables, grain bowls or roasted sweet potato. A little dressing can completely change a very simple meal.
The recipe makes around 150ml, so there's enough to see you through several salads or meals during the week. You can also add a little Dijon mustard if you prefer a rounder, more savoury flavour.
Ingredients
Makes approximately 150ml
6 tbsp olive oil
3 tbsp apple cider vinegar
1 tbsp maple syrup
1½ tsp mustard powder
Pinch of turmeric, optional
Salt and freshly ground black pepper
½ tsp Dijon mustard, optional
Method
Add all the ingredients to a jar and whisk together, or blend until combined.
Taste and adjust the seasoning or sweetness if needed.
Store in the fridge and shake well before using.
How to use it
This dressing works particularly well with:
Green salads
Roasted vegetables
Grain bowls
Roasted sweet potato
Lentil or bean salads
Simple leafy salads with avocado or feta
It also makes a lovely dressing for a simple salad of roasted vegetables and grains, particularly when you want something that brings everything together.
Storage
Store in a sealed jar in the fridge for up to 2 weeks. The olive oil may solidify slightly when chilled, so leave it at room temperature for a few minutes and shake well before serving.
