Smoky Mexican Lime Marinade
This is one of my favourite marinades for prawns and fish. It's smoky, citrusy and a little bit spicy, and takes about a minute to make.
I particularly love it with prawns, especially when I'm making prawn tacos, but it's also delicious with salmon or tofu. The combination of smoked paprika, cumin, coriander and fresh lime gives even the simplest ingredients plenty of flavour without needing a long list of ingredients.
It's also one of the useful little preparations from my Mindful Meal Prep System. I like having a few marinades and dressings ready in the fridge because they can completely change the character of a meal without requiring much extra effort.
Ingredients
Makes enough to coat 2–3 portions of protein
3 tbsp olive oil
Juice of ½ lime
1 tsp ground cumin
1 tsp smoked paprika
½ tsp dried coriander
Pinch of chilli flakes
Salt and freshly ground black pepper
Method
Whisk all the ingredients together in a small bowl or jar until combined. Or blend.
Use immediately, or transfer to a sealed jar and store in the fridge for up to 5 days.
How to use it
This marinade is particularly good with:
Prawns
Salmon
White fish
Tofu
For prawns or other seafood, marinate for no more than 30 minutes. Because the marinade contains lime juice, leaving seafood in it for too long can start to change the texture of the protein.
For tofu, you can leave it to marinate for longer so the flavours have more time to develop.
I particularly love the prawns cooked in this marinade and served in soft tortillas with avocado and a fresh herb dressing.
