Smoky Paprika Nut Mix
I always like having a jar of something savoury and crunchy in the kitchen, and this smoky paprika nut mix is particularly handy.
It's made with just four ingredients and takes a few minutes to prepare. The smoked paprika gives the nuts a lovely savoury depth, while a little olive oil helps everything toast until golden and fragrant.
I love eating them by the handful as a snack, but they're also brilliant for adding texture to simple meals. Scatter them over a green salad, roasted vegetables or a grain bowl when you want a little extra crunch and flavour.
It's a small preparation, but one that earns its place in the fridge or pantry.
Ingredients
Makes approximately 2 cups
2 cups mixed nuts
1 tbsp olive oil
1 tsp smoked paprika
Pinch of salt
Method
Heat a dry frying pan over medium heat.
Add the nuts and olive oil and toast, stirring regularly, until the nuts are golden and fragrant.
Add the smoked paprika and salt, toss well to coat, then tip onto a plate and leave to cool completely.
Once cool, transfer to an airtight container.
How to use it
This nut mix is particularly good:
Eaten by the handful as a snack
Scattered over green salads
Sprinkled over roasted vegetables
Added to grain bowls
Used as a crunchy topping for soups
You can also change the flavour depending on what you have in the spice cupboard. Try adding a pinch of chilli flakes for some heat, or a little ground cumin alongside the smoked paprika.
Storage
Store in an airtight container for up to 2 weeks.
