Sticky Toffee Pudding

This sticky toffee (or date) pudding is soft, indulgent, and naturally sweetened — perfect for a festive treat without going overboard. Served warm with a decadent but simple caramel sauce, it’s a Christmas classic with a mindful twist.

You will need (serves 6–8)

For the pudding:

  • 1 cup pitted medjool dates, chopped

  • 1 tsp baking soda

  • 1 cup boiling water

  • ¾ cup self raising flour

  • ¼ tsp salt

  • ¼ cup Saweet Way allulose + monk fruit sweetener

  • 2 large eggs

  • ¼ cup coconut oil or unsalted butter, melted

  • 1 tsp vanilla extract

For the sauce:

  • ½ cup coconut cream or full-fat milk

  • 2–3 tbsp Saweet Way sweetener (adjust to taste)

  • 1 tbsp coconut oil or unsalted butter

  • 1 tsp vanilla extract

  • Pinch of salt

Extras:

  • Serve with cream or ice-cream

Method:

  1. Preheat oven to 180°C (350°F). Grease a baking dish or individual ramekins.

  2. Place chopped dates in a bowl, pour over boiling water, stir in baking soda, and let sit 10-30 minutes.

  3. In a separate bowl, (or in your Vitamix) whisk eggs, sweetener, melted butter/coconut oil, and vanilla.

  4. Combine flour and salt in another bowl. Gradually sift and fold into the wet (egg) mixture.

  5. Optional: I pulsed my date mixture in the Vitamix to make it a little more syrupy but this is not essential.

  6. Stir in the date mixture (including water) until smooth. The batter will be glossy and sticky. Don’t worry too much if it looks quite runny.

  7. Pour into your prepared dish and bake for 25-35 minutes (ramekins may need 20–25 min), until a toothpick comes out mostly clean.

  8. While baking, make the sauce: combine coconut cream, sweetener, coconut oil/butter, vanilla, and salt in a small saucepan. Heat gently until thickened slightly.

  9. Serve pudding warm, drizzled with the sauce. Optional: sprinkle with toasted walnuts or a dusting of cinnamon.

  10. Serve with ice-cream if desired.

Notes:

  • Please note that using coconut cream and no sugar won’t give you that dark toffee look. If you want to make it darker you can add some maple syrup for colour.
