Watermelon, Feta & Mint Salad with Lime & Toasted Walnuts

This salad is sunshine in a bowl — juicy watermelon, creamy feta, fresh herbs, and a zesty lime dressing brought to life with the gentle crunch of toasted walnuts. It’s vibrant, cooling, and effortlessly festive — perfect for an Aussie Christmas table or a warm day shared with friends.

You will need (serves 4):

  • 4 cups watermelon, cut into cubes

  • 150g vegan feta (or traditional feta if preferred), crumbled

  • 1 small cucumber, thinly sliced

  • ½ small red onion, finely sliced

  • A handful of fresh mint leaves, torn

  • A handful of fresh basil leaves (optional)

  • ½ cup walnuts or pistachios, roughly chopped

For the dressing:

  • Juice of 1 lime

  • 2 tbsp extra-virgin olive oil

  • 1 tsp maple syrup or honey

  • Salt and black pepper, to taste

Method:

  1. In a small bowl, whisk together the lime juice, olive oil, maple syrup (or honey), and a pinch of salt and pepper. Set aside.

  2. In a large bowl, gently combine the watermelon, cucumber, and red onion.

  3. Add the crumbled feta, mint, basil (if using), and most of the nuts, reserving a little for garnish.

  4. Drizzle over the lime dressing and toss gently to combine.

  5. Transfer to a serving platter, scatter with the remaining nuts, and finish with a few extra mint leaves.
