Watermelon, Feta & Mint Salad with Lime & Toasted Walnuts

You will need (serves 4):
4 cups watermelon, cut into cubes
150g vegan feta (or traditional feta if preferred), crumbled
1 small cucumber, thinly sliced
½ small red onion, finely sliced
A handful of fresh mint leaves, torn
A handful of fresh basil leaves (optional)
½ cup walnuts or pistachios, roughly chopped
For the dressing:
Juice of 1 lime
2 tbsp extra-virgin olive oil
1 tsp maple syrup or honey
Salt and black pepper, to taste
Method:
In a small bowl, whisk together the lime juice, olive oil, maple syrup (or honey), and a pinch of salt and pepper. Set aside.
In a large bowl, gently combine the watermelon, cucumber, and red onion.
Add the crumbled feta, mint, basil (if using), and most of the nuts, reserving a little for garnish.
Drizzle over the lime dressing and toss gently to combine.
Transfer to a serving platter, scatter with the remaining nuts, and finish with a few extra mint leaves.
