Smoky Lime Prawn Tacos

Fish and prawn tacos are one of my favourite easy weeknight meals. Everything comes together so quickly and easily, particularly if you've done a little preparation at the weekend and followed my Mindful Meal Prep System. If you have the Smoky Mexican Lime Marinade and Everyday Green Herb Dressing ready to go in the fridge, you're already halfway there.

This is a really good example of how my Mindful Meal Prep System comes together, and how you can use a few simple preparations to create a beautiful, easy meal during the week.

I love the combination of smoky, spicy prawns with creamy avocado, crunchy slaw, pickled jalapeños and plenty of fresh coriander. Everything is tucked into a warm tortilla and finished with the green herb dressing and a squeeze of lime.

Method

Marinate the prawns in the Smoky Mexican Lime Marinade for up to 30 minutes.

Meanwhile, mash the avocado with the lime juice and set aside.

Heat a frying pan over medium heat. Add the prawns and cook for 2–3 minutes on each side, or until golden, lightly browned and cooked through.

Warm the tortillas, then fill with the avocado, crunchy slaw and prawns. Drizzle generously with the Everyday Green Herb Dressing and finish with the sliced jalapeños and fresh coriander.

Serve with extra lime wedges and enjoy.

How this works with the Mindful Meal Prep System

This is exactly the kind of meal I had in mind when I developed my Mindful Meal Prep System.

Rather than preparing complete meals for the week, the idea is to have a few useful components ready to go. The smoky Mexican lime marinade and Everyday Green Herb Dressing can then be used in different ways throughout the week, giving you plenty of options without having to start from scratch every time.

For these tacos, all you need to do is prepare the prawns, mash an avocado, warm some tortillas and assemble everything together. A little preparation at the weekend has turned into a fresh, colourful dinner with very little work on the night.
